How to make a Pineapple Daiquiri - a Subscriber Submission

Hey Rum Cocktail fans. Welcome back to the blog. Gordon kindly submitted this week's Daiquiri of the week from all the way down in Australia.


He sent through this amazing Pineapple Daiquiri. But one of the ingredients made me sit up and think Ooooooo. Bobs Diffords Daiquiri Bitters.


I’ve been eyeing them up for quite a while. But already owning the Ms. Betters Pineapple & Star Anise Bitters, it’d be a bit of an unnecessary purchase. Nonetheless, I didn’t need my arm twisting too much. So this was the perfect excuse to purchase from Master of Malt.


After testing them in a classic Daiquiri. WOW. Ripe Pineapple with subtle Mint is perfect. I can confirm these WILL get caned cos I love my Daqs.

30ml Pressed Pineapple Juice



Summing up.

I flippin loved it! Now is this what I’d call a Daiquiri? No. Is this a Pineapple Daiquiri? No. A Pineapple Daq for me is Pineapple Rum, Lime, and Sugar. Or at the very least. Rum, Lime & Pineapple Syrup.


However. Is this a fantastic Cocktail that I’d drink over and over again? Yes. Massively. Well balanced. Zingy. Zesty. Fruity. Delicious. My only thing was totally my fault. I opted for Plantation Barbados 5yo. Whereas I think the Xaymaca, with its Jamaican Funk notes, would’ve complemented this drink much more.
